This walnut wafer is the perfect light cookie to serve with rich ice cream.
Just enough crispness and flavor. Easy to make and a good keeper, if you keep your hands out of the cookie jar.
Walnut Wafer Cookies
2 eggs
1 cup brown sugar
1 cup very finely chopped walnuts
3 tablespoons flour
1/4 teaspoons baking powder
Preheat the oven to 325 degrees F.
Beat the eggs and brown sugar until light. Stir in the nuts, flour and baking powder. Drop by half teaspoons ( the equivalent of a measuring teaspoon) onto a well-greased baking sheet. Flatten to the size of a fifty-cent piece by dabbing with a dampened finger. Bake until the edges are just beginning to brown and the top looks dry, about 5 to 10 minutes. Cool on the baking sheet for a minute or two and then remove to a baking rack to cool completely.
Makes about 8 dozen wafers
